A cutting board is one of the main attributes of a kitchen. Classic kitchen products are used for cutting vegetables, meat and fish. Some models are only for serving food or serving the table. A great professional is used by chefs in restaurants.

Features and types

Professional cutting boards produce from special raw materials, which are natural, pure material and have high strength. The pressed wood fiber from which these products are made ensures safety in use and a long service life.

The surface is usually impregnated with oil or wax. This prevents liquid from penetrating into the fibers of the cutting board.

Wax and oil push water and food juices to the surface.

Professional cutting boards are used for cutting and shredding products, cutting fish, slicing bread, cheese and sausages. The surface of such products is made of hard, dense wood, therefore it is convenient to beat meat on professional boards.

End boards

Of the professional chopping products, it is worth noting the end board. In conventional wood models, the grain of the wood runs parallel to the cutting surface. In the end product, wooden fibers are located strictly perpendicular to the surface.

When processing products and the contact of the blade with the cutting surface, the wood fibers move from side to side. Then the wooden fibers return to their original position. When the knife contacts the surface of a regular cutting surface, the blade is cut through the fibers of the tree.

You may even notice that the surface of regular wood cutting boards becomes jagged over time.This means that pieces of wood from time to time end up in food and stomach. When cutting products on an end product, the surface of the product does not deform, and the knives stay sharp longer and do not require frequent sharpening.

The end model also has antimicrobial properties. After contact with the blade, the surface fibers "close", and the oily coating of the end board protects the wood fibers from the penetration of harmful bacteria and compounds.

Materials (edit)

Professional cutting products are mainly made from high quality wood. It could be the highest quality oak, beech, bamboo as well as glass and plastic.

Wooden cutting boards have been used since ancient times. And for a modern person, such products are more familiar. When using wooden planks, the knife blades retain their properties longer. Products are made from natural raw materials, so they can be safely called more hygienic than boards from other materials.

Products bamboo quite practical, have a long service life and are resistant to damage. They do not absorb liquids and odors, and the edge of the knives is less subject to deformation. Disadvantages include high cost and size. Most often, bamboo products are presented in small and medium sizes.

Products from glass more intended for serving dishes and serving the table. During production, a variety of patterns and patterns are applied to the glass surface. Such a product looks aesthetically pleasing, but not practical to use. When in contact with glass, the knives lose their properties, and when cutting products, the surface emits an unpleasant squeak. The disadvantages include the fact that ceramic knives must not be used on the glass board.

In the manufacture of plastic products used plastic of various thicknesses... Boards made of thin plastic are quite cheap, do not absorb odors and have a long service life. The colored plastic boards are dishwasher safe. Of the minuses, it is worth noting the instability to high temperatures and sliding on the table surface. Do not use the product as a food service. The surface bends due to weight.

Dense plastic is used in the manufacture of higher quality professional products for chefs. Thick plastic includes polypropylene, polyethylene, vinyl plastic.

Products made of dense plastic do not deform, are resistant to high temperatures, do not blunt knife blades, do not absorb odors and water, wash well and are practically eternal. The only drawback is the weight of the products. Dense plastic boards are quite heavy.

Silicone make special rugs for cutting vegetables. Figuratively they are called cutting boards.

They are easy to clean, do not fidget on the table, do not blunt knives. These boards save space. They can simply be rolled up.

Correct care

An ordinary product can be simply washed with a little detergent or under hot running water. Professional cutting boards require special care.

Some nuances to remember when using professional products:

  • do not put the board in the oven or microwave;
  • do not store the product near stoves or heating;
  • after washing, thoroughly wipe and dry;
  • not dishwasher safe.

From time to time, you should also wipe the cutting surface with oil and minerals. In this case, you can use flaxseed or sunflower oil.

Processing can be carried out every 2 months.

For processing, you need to take a piece of cotton cloth soaked in oil. In a circular motion, the oil is rubbed onto the surface of the cutting board. After that, the product should be left alone for 8 hours. The board will absorb the right amount of oil. If oil remains on the surface, wipe the product with a clean cloth.
